I absolutely love this simple way of cooking cauliflower and will have it instead of rice with a bean chilli or curry. Cauliflower is part of the cruciferous family and is great for supporting balanced hormones and liver health. It's also rich in vitamins and minerals and bursting with fibre. The addition of ginger, turmeric and coriander boosts the anti-inflammatory properties of this dish and garlic is a fab prebiotic providing food for your gut bugs.
INGREDIENTS:
*1 medium cauliflower, core removed and sliced very finely
*A good chunk of fresh ginger finely chopped
*2 garlic cloves sliced or crushed
*1/2 tsp of ground turmeric
*A bunch of fresh coriander chopped
*Chilli flakes (optional)
*Salt and pepper to taste
*1 tbsp of olive oil
METHOD:
Heat the oil in a frying pan or wok and then add all the ingredients. Gently stir fry for around 4-5 mins stirring to prevent burning. Once the cauliflower is tender its ready to enjoy! Serve with your favourite chilli, curry or one pot meal.
