I love these raw energy balls. Packed full of nutrient dense goodness and totally irresistible! The best bit is how quick and easy they are to assemble.
I make a batch at the weekend and pop them in the fridge and munch on them throughout the week. They have become my absolute ‘go to’ snack when I need a pick me up or a healthy sweet hit.
Delicious AND bursting with fibre, protein, healthy fats and rich in magnesium, calcium, zinc and iron. What’s not to love?! 💜
1 cup almonds
1 cup cashews or hazelnuts (use any mix of nuts/seeds that you fancy)
2 tbsp chia seeds
1 tbsp raw cacao powder
1 tbsp Lucuma powder (or Maca Powder)
2 tsp cinnamon or vanilla essence
Large pinch of salt
Zest of 1 orange (optional)
200g medjool dates (pitted)
Blitz the nuts and chia seeds in a food processor until you have a coarse flour. Add all the dry ingredients and mix again. Add the melted oil and add the dates 1 at a time. Mix until you have a yummy coarse, sticky flour. Roll into balls and cover in desiccated coconut.
Pop them in the fridge.... and enjoy!
